Monday through Friday. Like many, I work a 9-5 job and am completely exhausted when I get back home. All I want to do is relax with my hubs and puppies. I can certainly say that I do NOT want to cook for over an hour as soon as I step in the door!
The quicker the meal is to prepare, the more likely I am to resist the urge to run through the drive thru or eat something unhealthy.

BUT…WHAT SHOULD I EAT FOR DINNER TONIGHT?
The age old question. You finally get home after a long day and stare at the fridge wondering if you are going to be able to keep this keto diet that you are on or if you are going to smash a whole bag of bagels. We have all been there. The best thing to do is KEEP IT SIMPLE. Start with meat, add a good fat (oil, cheese, etc.) and add sides that are keto friendly (riced cauliflower, zucchini noodles, or a low carb veggie.)
SIMPLE WAYS TO BE PREPARED ON THE KETO DIET
I like to refer to this as lazy meal prep. Preparing the time consuming part of your meal ahead of time can make for a super quick dinner or lunch thrown together at a moment’s notice. As a rule, I have a few simple tasks I complete at the beginning of each week to make sure I know what is for dinner- AND I know exactly how I am going to achieve the goals I have set out:
Have meat thawed out for the week on Sunday/Monday so when you are ready to cook- your meat is too
Chop your veggies on your normal “meal prep” day. Have washed, fresh veggies ready to go in the fridge for dinners that week
Mix your spices/sauces at the beginning of the week so you don’t spend time and extra dishes measuring out everything the night of
Have an idea of what you are going to cook for dinner each night- even if the idea is “leftovers!”

There are thousands of recipes online now, make sure you are staying focused and not overwhelming yourself with all of the choices. If you are like me, sometimes all of the choices can paralyze you and you can just give up! BUT, if you stay focused on what you know- high fat, moderate protein, and very low carb- you will be successful on the keto diet and you will always have amazing keto dinner ideas.
