I have always wanted to travel to Europe. For as long as I can remember, I have been obsessed with Europe's history. The culture of Europe is so rich and beautiful. I have always wanted to sit at a small cafe in France and eat a giant bagette with copious amounts of delicious, expensive cheese. I would sip my wine and say things like "Yes, we are summering here." and I would only speak perfect French. And I would know all about the wine and cheese selection.
Lord help us all it is like a million degrees outside. I am permenately covered in a layer of sweat and self loathing.
Summer is great for things like swimming and boating- but it can be terrible for cooking. When it is 90+ outside, there is no way that you want to stand in front of a hot stove and fill your painstakingly cool house with heat.
So what do you do? You grill.
I need chocolate. I need it in my life, on a daily basis. I love it in all forms and with every fiber of my being. Chocolate makes me believe that the annoying things humans do are whimsical. It allows me to communicate with people at work without losing my job.
Chocolate is a necessity.

I don't know about you, but I have a hard time planning time to actually cook breakfast before work.
For a long time, I didn't even eat breakfast. I had a giant thermos of coffee and by 10 am I was shaky and starving.
So, I got smart and started focusing on having some sort of protein for breakfast each morning, whether I felt like eating or not. This allowed me to stop overeating at lunch, and it evened out my blood sugar so I didn't feel shaky or lightheaded in the morning.
I realized today I have exactly 856 pounds of frozen chicken breasts in my freezer. While clearly that is an appropriate amount of poultry to keep on hand, I began to think that next week's menu must include a couple of chicken dishes.
And while I like to cook, I am a painfully lazy cook. And there are few things lazier than one pot meals.
Oh the beauty of a meal requiring only one pan. Saving on time, dishes, and sanity- one pot meals make busy weeknight meals actually doable.
Monday through Friday. Like many, I work a 9-5 job and am completely exhausted when I get back home. All I want to do is relax with my hubs and puppies. I can certainly say that I do NOT want to cook for over an hour as soon as I step in the door!
The quicker the meal is to prepare, the more likely I am to resist the urge to run through the drive thru or eat something unhealthy.

The Keto diet seems to be getting a lot of attention these days. For those of you like me, who are not nutritionally savy, I will give a brief definition of the Keto diet.
Basically, it boils down to working with your body and training it to burn fat before it burns anything else. By drastically decreasing your intake of carbohydrates, your body enters ketosis (ahem- keto, remember?) and as a result begins to use fat for energy as opposed to carbs.
I grew up on Prego and thin spaghetti noodles. Oh I could smell that stuff cooking from a mile away. Spaghetti night was one of my favorite nights as a kid. I loved being able to slurp the noodles and cover my plate with as much parmesan as I so desired. My mama would grab a jar of Prego and brown some beef up and we would have dinner on the table in 20 minutes. My mother was magical that way.
